In a large skillet or wok, heat the sesame oil over medium heat. Once hot, add the ground turkey sausage. Use a wooden spoon to break it apart as it cooks. Sauté the sausage until it’s browned and cooked through, about 5-7 minutes.
Once the turkey sausage is cooked, add the sliced yellow onions, minced garlic, and minced ginger to the skillet. Stir well and sauté for an additional 2-3 minutes until the onions become translucent and fragrant.
Next, add the shredded green cabbage, red cabbage, and carrots to the skillet. Toss everything together, allowing the vegetables to wilt slightly and become tender, which should take about 5-6 minutes.
Pour the soy sauce over the mixture, and sprinkle in the kosher salt and ground black pepper. Stir well to ensure the seasoning is evenly distributed throughout the bowl. Taste and adjust seasoning if necessary.
Remove the skillet from heat and stir in the chopped green onions and cilantro, if using. Divide the turkey sausage mixture into serving bowls and enjoy warm. This dish can be served on its own or over rice for a more filling meal.
