Ingredients
  

  • 60 ml Espresso coffee cooled
  • 1 piece ripe banana
  • 80 ml coconut milk
  • 3 cubes ice
  • 2 tablespoons shredded dried coconut

Method
 

  1. Start by brewing your espresso. Allow it to cool to room temperature. If you don’t have an espresso machine, strong brewed coffee can work as a substitute.
  2. Peel your ripe banana and break it into chunks. The riper the banana, the sweeter your milkshake will be!
  3. In your blender, add the cooled espresso, banana chunks, coconut milk, and ice cubes.
  4. Blend the mixture on high speed until it reaches a creamy, smooth consistency. You may need to stop the blender and scrape down the sides to ensure everything is well incorporated.
  5. Once blended, add the shredded dried coconut to the milkshake and pulse the blender a few times to mix it in without completely breaking it down. You want to maintain some texture.
  6. Pour your Vegan Coffee Milkshake into a glass or Mason jar. You can top it with extra shredded coconut if you like, and enjoy it immediately for the best flavor and texture!

Notes

  • For a thicker milkshake, use frozen banana chunks instead of fresh ones.
  • Experiment with different plant-based milks, such as almond or oat milk, to find your favorite flavor combination.
  • If you prefer a sweeter milkshake, feel free to add a touch of maple syrup or agave nectar.
  • For a chocolatey version, add a tablespoon of cocoa powder or some vegan chocolate syrup.
