Ingredients
  

  • 1/4 cup olive oil -
  • 1/2 cup finely diced onion -
  • 2 teaspoons fresh ginger minced
  • 1 large clove garlic minced
  • 1/2 teaspoon garam masala spice mix -
  • 1/2 teaspoon kosher salt more to taste
  • 1/4 cup all-purpose flour -
  • 2 cups low-sodium vegetable broth -

Method
 

  1. In a medium saucepan, heat the olive oil over medium heat. Add the finely diced onion and sauté for about 5 minutes, or until the onions become translucent. Stir in the minced ginger and garlic, and cook for an additional 1-2 minutes until fragrant.
  2. Sprinkle in the garam masala and kosher salt. Stir well to coat the onions, ginger, and garlic with the spices. Let it cook for another minute to bloom the spices and enhance their flavors.
  3. Add the all-purpose flour to the pan and stir constantly for about 2 minutes to create a roux, helping to thicken your gravy.
  4. Gradually pour in the low-sodium vegetable broth while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer and allow it to thicken, about 5-7 minutes.
  5. Once your gravy has thickened to your liking, taste it and adjust the seasoning with more salt if necessary. If it’s too thick, add a splash more broth until you reach the desired consistency.

Notes

  • Store leftover gravy in an airtight container in the refrigerator for up to 5 days.
  • Reheat on the stovetop, adding broth if it has thickened too much.
  • This gravy can be frozen for up to 3 months.
