Ingredients
  

For the Filling:
  • 2 cups broccoli lightly cooked
  • 1 lb pizza dough about 1 package of raw store-bought pizza dough
  • 1 tbsp flour for dusting
  • 2 cups mozzarella cheese shredded (can use half provolone cheese)
  • 1 cup roasted red pepper the marinated kind you buy in a jar, diced
  • 1 tsp Italian seasonings dried
  • 1 cup pizza sauce or any marinara sauce you'd like
  • ½ cup bell pepper diced
  • 1 cup roasted vegetables like cauliflower
  • 1 cup spinach cooked
  • 2 tbsp butter unsalted, melted
  • 2 cloves garlic minced (substitute ½ tsp garlic powder)
  • 1 tbsp basil fresh chopped
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp parmesan cheese freshly grated

Preparation Steps:
  1. Step 1: Prepare the Dough - Start by preheating your oven to 400°F (200°C). Lightly flour your work surface and roll out the pizza dough into a large rectangle, approximately 12x16 inches.
  2. Step 2: Get the Filling Ready - In a mixing bowl, combine the lightly cooked broccoli, diced roasted red peppers, diced bell pepper, cooked spinach, and roasted vegetables. Add in the mozzarella cheese, half of the parmesan cheese, Italian seasonings, salt, pepper, and basil. Mix until everything is well incorporated.
  3. Step 3: Assemble the Stromboli - Spread the pizza sauce evenly over the rolled-out dough, leaving about an inch border on all sides. Next, layer the vegetable and cheese mixture over the sauce.
  4. Step 4: Roll It Up - Starting from one long edge, carefully roll the dough over the filling, tucking in the sides as you go to prevent any filling from spilling out. Pinch the edges to seal tightly.
  5. Step 5: Brush with Garlic Butter - In a small bowl, mix the melted butter and minced garlic. Brush this mixture generously over the top of the stromboli.
  6. Step 6: Bake the Stromboli - Transfer the stromboli to a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  7. Step 7: Serve and Enjoy! - Once out of the oven, allow the stromboli to cool for a few minutes before slicing. Serve with additional pizza sauce or marinara for dipping.

Notes

  • Prep ahead by assembling the stromboli and refrigerating it for up to 24 hours before baking.
